The ?mostardella? is a dark-red coloured salami. Typical poor salami, extracted from the swine and bovine?s second choice meats. The inhabitants used to cook it with eggs on the top on the stove to make it more tender; a sort of Ligurian ?bacon & eggs?. In the past, it was used that the candidate grooms had to bring a ?mostardella? to his girlfriend?s parents: the wedding would have been allowed, just in case the father accepted to cut the mostardella.
